How to Plan a Multi-Protein BBQ Cook (Brisket, Ribs, and Sides Together)
Learn how to coordinate multiple proteins and sides so everything finishes at the same time. A step-by-step guide to meal-level BBQ planning.
The mark of a great pitmaster isn't just cooking one thing perfectly—it's cooking everything perfectly, and having it all ready at the same time.
Here's how to coordinate a multi-protein cook so your brisket, ribs, and sides all hit the table together.
Start with Your Serve Time
Everything starts with when you want to eat. Let's say 6 PM on Saturday.
Work backwards from there.
Step 1: Identify Cook Times and Rest Periods
Brisket (12 pounds):
- Cook time: 18-22 hours at 225-250°F
- Rest time: 2-4 hours (minimum 2 hours)
- Target finish: 2-4 PM (to rest until 6 PM)
Baby Back Ribs (2 racks):
- Cook time: 5-6 hours at 225°F (3-2-1 method)
- Rest time: 30 minutes
- Target finish: 5:30 PM
Sides:
- Mac and cheese: 45 minutes (start at 5:15 PM)
- Corn on the cob: 30 minutes (start at 5:30 PM)
- Baked beans: 1 hour (start at 5:00 PM)
Step 2: Build Your Timeline
Friday 8:00 PM: Start brisket (assuming 20-hour cook, finish at 4 PM Saturday)
Saturday 12:00 PM: Start ribs (assuming 5.5-hour cook, finish at 5:30 PM)
Saturday 5:00 PM: Start baked beans
Saturday 5:15 PM: Start mac and cheese
Saturday 5:30 PM: Start corn on the cob, pull ribs to rest
Saturday 6:00 PM: Serve everything
Step 3: Account for Variables
Every cook is different. Build in buffer time:
- Start brisket 2-3 hours earlier than your estimate
- Have a plan if brisket finishes early (rest longer) or late (wrap to speed up)
- Keep sides simple if timing is tight
- Have backup plans for quick sides that can be done last-minute
Step 4: Equipment Considerations
Do you have enough space? Can you run multiple items at different temperatures?
- Single smoker: Cook brisket first, hold in cooler, then cook ribs
- Multiple smokers: Cook simultaneously at same temp
- Grill + smoker: Use smoker for long cooks, grill for shorter items
Common Mistakes
Mistake #1: Starting everything at the same time
Different items need different times. Plan each item individually.
Mistake #2: Forgetting rest time
Brisket needs 2+ hours rest. Ribs need 30 minutes. Account for this in your timeline.
Mistake #3: Underestimating side dish timing
Sides often take longer than you think. Start them earlier.
Mistake #4: No buffer time
Build in extra time. It's better to finish early and rest longer than to rush.
The Braai Approach
This is exactly what Braai does automatically. We:
- Calculate individual cook times for each item
- Factor in rest periods
- Coordinate everything backwards from serve time
- Build in buffer time for safety
- Give you a step-by-step timeline
You don't have to do the math. You don't have to guess. You just follow the plan.
Plan your multi-protein cook with Braai and take the guesswork out of timing.
